Peanut Butter Pie with Sally Hildebrandt

​Oreo Crust
  • ​24 Oreos crushed
  • 5 Tbsp. melted butter

Mix crushed Oreos and butter and press into a pie pan using the back of a measuring cup. You can bake the crust and then add filling OR fill without baking. Baking will help spread the butter more evenly throughout the crust.
Let cool before filling. 

Filling
  • 1 (8 ounce) package of cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 (16 ounce) container frozen whipped topping, thawed
  • 15 miniature Reeses peanut butter cups

Directions
Mix the cream cheese, powdered sugar and peanut butter together until smooth.
Fold in 1/2 of the whipped topping.
Spoon the mixture into the graham cracker crust.
Place the remaining whipped topping over the top of the peanut butter mixture and garnish with the peanut butter cups.
Chill for at least 2 hours or overnight before serving.

Kim's Chocolate Cake

​​Cake:
  • 3 cups flour
  • 2 cups sugar
  • 1/2 cup cocoa
  • 2 eggs
  • 1 tsp. salt
  • 1 cup veg. oil
  • 2 tsp. baking soda
  • 1 tsp. vanilla
  • 2 cups boiling water

Combine all the ingredients, adding the boiling water at the end. 
Cook in a greased 9"x13" pan at 350° for 20-25 minutes.

Frosting:
  • 3 cups powdered sugar
  • 1/2 cup cocoa
  • 1/3 cup softened butter
  • 1/2 tsp. vanilla
  • 2 Tbsp. milk
Mix butter, powdered sugar and cocoa. Stir in vanilla and milk until smooth. 

Frost the cake once it has cooled.

Caramelitas
  • ​2 Cups butter
  • 2 1/4 Cups Brown Sugar
  • 3 cups flour
  • 3 cups quick oats
  • 1 tsp. salt
  • 2 tsp. baking soda
  • Milk chocolate chips. I like Guittard chocolate for this recipe.
  • Caramel. You can use Kraft Caramels or Peters Caramel if you are in a hurry. I use one bag of Kraft caramels or 2 inches of Peters Caramel. Add 2 tsp of milk and microwave for about 5 minutes. I stop it every minute to stir.

​I like to make homemade caramel for these bars. The caramel recipe is one that my mom has made for years. It is a family favorite. They are great on their own or in this recipe.

Caramel recipe:
  • 1 Cup of sugar
  • 3/4 cup corn syrup
  • One stick of butter
  • 1 cup of whipping cream
  • 1 tsp vanilla
  • flake salt
1. Butter sides of medium size sauce and melt butter, syrup, sugar, and 1/2 cup cream
2. Bring to a boil over medium heat
3. When it boils, add the remaining cream and bring it to a boil again until around 238° or medium ball stage. This will also depend on your elevation. You can do the cold water test as well.
4. Take off the heat and add vanilla.

Instructions for cookie bars
1. Butter a sheet pan, 12x18x1
2. Mix softened butter, brown sugar, flour, oats, salt, and soda together
3. Take 3/4 of the mixture and press it into the cookie sheet
Bake for 8 minutes at 350°
4. Pour on caramel and spread evenly. Sprinkle on some flake salt.
5. Generously sprinkle on chocolate chips and drop spoonfuls of the remaining cookie mixture on the top.
6. Bake another 10-12 minutes.

Let cool and enjoy!

The Perfect Chocolate Chip Cookie

Kami's Chocolate Chip Cookies
Grandma's Chocolate Chip Cookies
  • 1/2 cup softened Butter
  • 1/2 cup Butter Flavor Crisco
  • 3/4 Cup white sugar
  • 3/4 Cup brown sugar
  • 1 tsp. vanilla
  • 1/2 tsp. water
  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 1/4 Cup flour
  • 2 cups chocolate chips

Cream butter, Crisco, and sugars together. Add water and vanilla, and eggs until combined.

Once mixed, add flour, salt, and baking soda. Mix until combined. Fold in chocolate chips. I love semi-sweet, but you can use any chocolate you like.

Spoon onto a baking sheet lined with parchment paper or a silicon mat

​Bake at 350° for 10 minutes. Do not over bake!

Sweet & Sour Chicken Wings

1 1/2-2 cups sugar
1 C. vinegar
1/2 cup pineapple juice
4-8 Tbsp. ketchup
2 Tbsp. soy sauce
2 Tbsp. Accent salt (you can omit this if you want to, they will still be yummy without it)
1 tsp. salt

garlic salt
2 1/2 lbs. chicken wings
2 beaten eggs

Salt chicken with garlic salt and dip in beaten eggs. Shake in flout bag and fry until golden brown. Combine remaining ingredients and heat to boiling. Pour over wings in shallow baking dish. Bake at 350° for 1 hour, turning once. Serve hot!
