4 Cups sugar 1/2 tsp. salt 2 Tbsp. vanilla 2 Cups corn syrup 6 Cups whipping cream Mix sugar, syrup, salt and 2 cups of cream together, bring to boil, stirring constantly. As mixture cooks, thickens, and turns light tan color add 1 more cups of cream, repeat, stirring constantly, adding final cup of cream, cook to firm ball stage, (I use cold water method) remove from heat, add vanilla and pour into buttered 8x8 pan. Cool, cut and enjoy! This recipe is fabulous for wrapped caramels or caramel apples. For caramel apples: 20-25 Granny Smith apples Skewer sticks, you can find them on amazon or craft stores. You can also use popsicle sticks. Parchment paper Wash your apples with hot water and get all the wax off of them. Dry them well! Stick the skewers into the apples, you can do this while the caramel is cooking. Once the caramel is cooked, start to dip your apples. Leave a little bit of apple showing at the top. Turn the apples upside down and let the caramel cool before you place them on the parchment paper. You can dip your apples in anything you would like, cookies, chocolate, chips, potato chips, candy bars, white chocolate, etc. If you want to coat your apple in white chocolate or candy bars, give the caramel time to completely cool before dipping. These apples make great gifts!
