Kami's Baked Beans
Baked Beans
  • 3 small cans of pork and beans
  • 1/2 lb. bacon
  • 2/3 cup chopped green pepper
  • 2/3 cup chopped onion
  • 1/2 cup brown sugar
  • 1/2 cup ketchup
  • 1 Tbsp. Worcestershire sauce

Cut the bacon into small pieces and brown. Drain most of the grease but not all of it. Add green pepper and onion and saute for about 5 minutes. Mix all the ingredients together and bake in a casserole dish at 350° for 45 minutes to one hour. Bake covered for the first half-hour and stir and then uncover the beans and finish baking.

Kami's Strawberry Fruit Leather
Strawberry Fruit Leather
  • 6 cups washed strawberries
  • 1/3 cup sugar
  • 1 1/2 Tbsp. freshly squeezed lemon juice

​Blend the ingredients in a blender until smooth.
 
Pour into two half sheet cookie sheets lined with a silicon mat. The silicon mats work better than parchment paper. If you do use parchment paper, make sure to spray it with cooking oil. 

Spread out using an offset spatula.
 
Bake at 170° for 3-5 hours. The baking time will depend on the thickness of the leather. The leather is done when the puree is completely set.

You can cut or tear the leather and store in an air tight container.

Chicken Salad Sandwiches
Salad
  • 3 cups shredded chicken
  • 1 1/2 cups celery
  • 1 1/2 cups sliced grapes
  • 1 cup slivered almonds
  • 3 Tbsp. chopped green onion
Dressing:
  • 2/3 Cup Mayonnaise, light or regular
  • 1 Tbsp. lemon juice
  • 1/8 tsp. salt
  • 1/2 tsp. pepper
Mix well and add to chicken salad. 

You can eat it on a croissant, roll or lettuce leaf.

Kami's Winger's Sticky Fingers Salad
Winger's Sticky Fingers Salad
Winger's Sticky Finger Sauce
  • 1/3 C. Franks Hot Sauce
  • 1 1/4 C. Brown Sugar
  • 1/2 Tbsp. Water

Mix until sugar dissolves. 
You can also buy Winger's Sauce from Winger's online, Costco (during the summer), and Amazon.

Salad Dressing


  • 1 C. Mayonaise
  • 1 C. milk
  • 1 Ranch Dressing Packet or 3 Tbsp. Ranch Dressing Powder 
  • Stir until mixed, and then add 1/2-3/4 C. Wingers sauce to taste

Salad
  • 7-8 Breaded Frozen Chicken Tenders, cooked 
  • 3-4 Hearts of Romain lettuce, cleaned and chopped
  • 1/2-3/4 C. dried Cranberries
  • 3/4 C. Shredded Carrots
  • 1 C. Shredded Cheddar Cheese
  • 1-pint cherry tomatoes
Cook the chicken in the air fryer or oven according to the directions on the package. Coat the chicken fingers in the Winger's Sauce and cut them into bitesize pieces. 

Layer the salad with cranberries, carrots, cheese, and cherry tomatoes. Top off with the sauce-covered chicken.​

Brown Buttered Salted Rice Krispies Treats

Kamis's Rice Krispies
  • 12 Tbsp. Salted Butter
  • 20 oz. marshmallows
  • 1 tsp. flake salt
  • 1 tsp. vanilla
  • 10 cups of Rice Krispies

Brown the butter on medium heat. Turn down the heat and add all but a cup of marshmallows. Stir until smooth.

Add 1/2 tsp. flake salt, vanilla and Rice Krispies until mixed.
Once mixed, add remaining marshmallows.

Pour into greased 9x13 inch pan with a greased piece of wax paper. Flatten and add remaining flake salt onto the top of the Rice Krispie Treats. 

To add some fun, you can use different colors of Rice Krispies, you can add sprinkles or food coloring or even M&M's. If adding M&M's wait for the treats to cool before adding them or they will melt. You can also cut them into fun shapes using cookie cutters.

Butter Rich Cookies
  • 3/4 cup butter
  • 1/2 cup brown sugar
  • 1 Tbsp. white sugar
  • 1 unbeaten egg yolk
  • 1 tsp. vanilla
  • 1 3/4-2 cups flour
  • Frosting
  • 3/4 cup butter 
  • 2 1/2 cup powdered sugar 
  • 1 tsp. vanilla
  • 3-4 Tbsp. milk

Instructions
Preheat oven to 350
Beat butter and sugar until fluffy mix in egg yolk and vanilla. 
Add flour, roll the dough into small balls.

Place on a cookie sheet lined with parchment paper. Press the bottom of a glass onto the dough and then into a dish filled with sugar and flatten balls until they are about the size of a quarter. 
Bake at 350 for 6-7 minutes and let cool. 

For frosting, brown butter in a saucepan. Blend in sifted powdered
sugar and milk.

Add vanilla and frost with a knife or put frosting in a pastry bag
and squeeze a dollop of frosting on each cookie.

  • 2 eggs  
  • 2 cups sugar
  • 1 cup shortening
  • 2 cups applesauce
  • 4 cups flour
  • 1 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cloves
  • 1 1/2 t. cinnamon
  • 2 1/2 tsp. soda
  • 2 cups chocolate chips

Mix as any cookie and bake at 375 for approx. 10 min.

  • 1 1/2 cup white sugar                                                                  
  • 1/2 cup softened butter
  • 2 eggs well beaten
  • 3 1/2 cups sifted flour
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 cup sour cream
  • 1 tsp. vanilla

Cream butter with sugar. Blend in eggs and vanilla. Sift dry ingredients together. Mix dry ingredients alternately with creamed mixture and sour cream.

Drop medium balls by rounded teaspoon on  greased cookie sheet.
Bake at 425 for 8-9 minutes. Remove immediately from cookie sheet and sprinkle with a cinnamon sugar mixture.

Wait at least 2 to 3 minutes after taking from oven to shake cookies in cinnamon and sugar. Cookies fall apart if moved too soon.

Lasagna Rollups
You can use hamburger or sausage or go meatless. We usually eat these meatless. 
  • 1 lb. of meat cooked
  • 1 box of lasagna noodles
  • 1 1/2 cup cottage cheese
  • 1/2 cup parmesan cheese
  • 2 cups mozzarella cheese
  • 4 oz. cream cheese
  • 1 egg
  • 1 tsp. parsley
  • 1 tsp. oregano
  • 1/2 tsp. garlic powder
  • 1 tsp. pepper
  • pasta sauce of your choice

Cook your lasagna noodles in boiling salty water for about 8 minutes. You want them al dente because they will continue to cook in the oven. 

Cook your meat and add your sauce until combined. 

In a blender, add cottage cheese, parmesan, cheese, 1 1/2 c. mozzarella cheese, cream cheese, egg and spices. Blend until mixed well, but not runny. 

Add cheese into pastry bag and spread a line of cheese on the noodles. Roll them up and pour your sauce over them. Then add the rest of your mozzarella cheese to the top and bake at 350 for 25 minutes. 

You can do half the recipe for a small group or double or triple the recipe for large groups. These are easy and delicious.

Delicious Edible Cookie Dough
  • 1 cup butter
  • 3/4 cup brown sugar
  • 1 small box of instant vanilla pudding
  • 1/4 cup milk
  • 1/2 Tbsp. vanilla
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 1/2 cups cooked flour- cook at 350 for 5 minutes or until it reaches 160 degrees
  • 2 cups chocolate chips

In large bowl, cream softened butter and sugar until fluffy. Add pudding and stir well. Add milk, vanilla, baking soda and salt. Slowly mix in flour until smooth. Dough will be slightly sticky. Stir in chocolate chips and chill. DO NOT BAKE. 

To make truffles...form chilled dough into balls and freeze. Dip in melted chocolate and chill again. Serve cooled.
